The Iliades family produces these hondroelia olives on the peninsular of Mt. Athos Halkidiki, in Greece’s Macedonia region. Unlike nearly all other olives, we do not add any heat, chemicals, acids, or preservatives.
Our tree ripened olives undergo a 100% natural six moth curing process in oak barrels packed with pure Aegean sea salt, rolled weekly to ensure even curing. The olives are then laid out to dry in the warm Mediterranean sun.
