All our olives are unpasteurized, and contain no chemicals beyond wine vinegar, our own
extra virgin olive oil, and sea salt. Most large volume olive companies have replaced red
wine vinegar with acetic acid, and dropped extra virgin olive oil in favor of “vegetable oil”.
